This is a recipe of my good friend and sous chef Pat, we make pretty often for staff meal at work. It’s pretty wonderful, simple to make and a fun new take on ordinary hot wings.
Chocolate Chipotle Chicken Wings
Ingredients
1 cup butter
2 cups Frank’s hot sauce
3 cloves garlic minced
3 T chipotle powder (more if you like it hotter)
4 T chocolate syrup
Directions
Lightly saute garlic in butter
Add in all other ingredients and simmer until thickens
Arugula, Apples, Blue Cheese, Walnuts & Celery
Miners Lettuce, Lamb Tongue, Cucumber, Mint, Feta & House Made Yogurt
Grilled Octopus, Potato Chips,Tomato & Green Onion Salsa and Garlic Aioli

Finally went to Pok Pok with my roommate the other day. This has been on my list of places to go since I moved here… not sure why it took me so long.
Tamarind Whiskey Sour – Tamarind, Fresh Lime Juice. Palm Sugar, and Bourbon on the rocks
Really great cocktail. Love my whiskey sours and the tamarind was a pleasant change of pace.
Ike’s Spicy Vietnamese Fish Sauce Wings
These are like famous around here. Now i know why. not really as spicy as i was hoping but the flavor was explosive.
Khao Man Som Tam – Green Papaya Salad with Coconut rice & Sweet Shredded Carlton Farms Pork.
This was awesome. I ordered due to the recommendation of our server, and wasn’t really expecting to be blown away. I have to say though, this is one of my favorite dishes in Portland so far. The green papaya salad was incredibly spicy but the pork and coconut rice was sweet sweet neutralizer.
Muu Sateh – Carlton Farms Pork Loin Skewers Marinated in Coconut Milk & Turmeric, Grilled Over Charcoal and Served with Peanut Sauce, Cucumber Relish and Grilled Bread
I didn’t try any of this but the cucumber relish kicked my roommates mouth in the ass. Definitely makes my list of one of the best meals in Portland. I cant wait to go back and try the rest of the menu.
